Chicken with Peach Slices and Couscous

• 415g Del Monte® Peach Slices in Juice
• 4 boneless chicken breasts
• 150g of couscous
• 100g of pumpkin seeds
• 100g feta
• 1 shallot
• Light honey mustard dressing, to serve
• Coriander, to garnish


1)Season the chicken breast with a sprinkle of salt and pepper, then roast at 190°C for 30-35 minutes. 2)Shred the chicken breasts and leave to cool. 3)Follow the instructions on the pack of the couscous to prepare. 4)Drain the Del Monte® Peach Slices in Juice and combine with the chopped shallots, crumbled feta, coriander and couscous. 5)Add the torn chicken breast and mix together. 6)Add light honey mustard dressing and serve.
