Somptuous Sweet and Savory Salad



• A few handfuls of iron-rich leafy greens – think kale, rocket or baby spinach
• 2 chicken breasts
• 1 avocado chopped into chunks
• Del Monte pears in juice
• Bacon lardons
• A handful of raspberries
• 60g feta cheese
• Sesame seeds
• For the dressing:
• Olive oil
• Sea salt flakes
• Pepper
• Balsamic vinegar


1)Spray oil into a griddle pan or add a drizzle if you’re using olive oil then heat it up until it’s medium hot. Gently place the chicken breasts in and cook on each side for about five minutes until it’s cooked through. When you’ve flipped it over, add the lardons to the pan and cook them with the chicken for the last five minutes. 2)While the chicken and bacon are cooking you can make the dressing. Whisk together a couple of tablespoons of oil with a splash of balsamic vinegar and a healthy pinch of salt and pepper - voila! 3)Place the leafy greens, chopped avocado, diced Del Monte pears, sliced chicken and bacon lardons into a bowl, drizzle with the dressing and give it a good shake. 4)Scatter the raspberries and sesame seeds on top, then crumble the feta for the finishing touch. Enjoy!
